Good morning friends!
First off, thank you for the support on yesterday’s post. I feel much more confident about my choices and am definitely going to stand my ground!
I’m beyond excited for today. The Hubby and I are taking off on a little getaway to Tahoe for a few days of hiking, relaxing and enjoying each other’s company.
The views not too bad either Can’t wait for fresh mountain air!
The Love Nugget is going to his Gigi’s today then my mom is picking him up for the rest of the weekend. He’s beyond excited to spend time with his family and we are so blessed that they enjoy watching him Alone time for The Hubby and I is very important as it helps us to reconnect when life gets crazy. Which is exactly how our life has been lately!
Speaking of family, yesterday we got to spend some time with my mother-in-law who we haven’t seen since June!
Her and her husband bought a house and some property in Alaska so have been up there working on it for several months. She just recently returned but with our crazy life we haven’t had a chance to connect yet. So The Love Nugget and I were both ecstatic to get to spend the day with her.
It made even more fun that she joined us on The Love Nugget’s field trip to Bishops Pumpkin Patch!
We went with his preschool for a field trip and had a blast! It was so cute to see him with his little school friends having such a good time
We’ve been to Bishops Pumpkin farm a few times before and it’s always a good time. They have a TON of activities including themed play structures, petting zoo’s, train rides, pig races, stories, pony rides and of course pumpkin picking!
We stayed after the field trip tour was over an enjoyed lunch with Nani then of course had to get someone a special treat
Chocolate monster! He literally passed out as soon as the car started moving. Worn out from such a fun morning!
Since we’re on the topic of pumpkin…
How about another pumpkin recipe!
I’d say it’s the last one but I’d be lying. Sorry I’m not sorry but I just love pumpkin! Especially when combined with some of my other favorite flavors like coconut butter, vanilla, and pecans.
AND it doesn’t hurt that these are protein packed making them perfect for before or after my workouts. I’ve especially been enjoying these before my early morning runs since they have some healthy fats for fuel and dates for energy!
Ingredients
- 1 cup raw pecans
- 1/2 cup raw pumpkin seeds
- 1/2 cup cashews
- 4-5 large mejdool dates
- 1 scoop Vanilla Protein Powder (I used About Time Whey Protein Powder)
- 2 tbsp. coconut butter
- 1-2 tbsp. pumpkin pie spice
- 1 tsp. vanilla
Instructions
- In a food processor, pulse nuts, pumpkin seeds, dates and protein powder.
- Add in coconut butter, pumpkin pie spice and vanilla.
- Pulse until the mixture begins to clump together.
- If it's too dry add more coconut butter.
- Form into balls or press into desired mold then chill until set.
- Store in an airtight container for up to three weeks.
I took these to my kickboxing training last week and they were a huge hit!
